Our dinner tonight was so yummy. Chicken tortilla bake is made with 5 ingredients. Chicken, shredded cheddar, rotel, cream of chicken soup and tortillas. Start by cooking and shredding 2 chicken breasts. Mix the shredded chicken with the can of cream of chicken soup and the rotel. I use mild rotel, but it is up to you how spicy you want it. In a 13×9 pan lay the first 4 torn up tortillas down. The next layer is half of the chicken mixture on top of the tortillas. Then add a layer of cheese. Repeat the process one more time. It is kind of like making lasagna. Bake at 350 degrees for 20 minutes. My hubs and kids like to add sour cream to the top. The kids pick out the rotel and will just eat the tortilla and chicken.
